Mango, cucumber and tomato salad

Ingredients

  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1 bag mango TASU Fruit Chips
  • 1 avocado, in cubes
  • 1 teaspoon parsley, chopped
  • Drizzle of olive oil
  • Juice of 1 lime
  • Salt to taste
  1. In a large bowl combine cherry tomatoes, cucumber, TASU Fruit Chips, avocado, and parsley.
  2. Season with salt and pepper, then drizzle with olive oil.
  3. Toss gently to combine and serve immediately for a crisp, refreshing bite!
