Kale salad on a bowl topped with TASU Fruit Chips and cheese

Kale and mango salad

Ingredients

  • 8 cups of kale
  • 1 tablespoon olive oil
  • Zest of 1 lemon
  • 2 1/2 tablespoons of lemon juice
  • 3 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 cup chopped dill
  • 1/4 cup chopped cilantro
  • 1 small red onion, thinly sliced
  • 2 bags mango TASU Fruit Chips
  • 85 gr diced feta cheese
  1. Mix the kale with 1 tablespoon of olive oil and massage with your hands for 5 minutes. Let it rest for 30 minutes.
  2. For the dressing, add the lemon zest, lemon juice, 3 tablespoons of olive oil, Dijon mustard, garlic, and salt in a processor until fully blended.
  3. Combine the lettuce, dill, cilantro, red onion, TASU Chips, and feta cheese in a bowl. Add the dressing and mix.
